Preparation time 15 to 20 minutes – Serves 4

Ingredients:

1 Package of seitan

1 clove of garlic

1 Tablespoon of tomato paste

1 cup of sliced mushrooms

1 cup of onions cut into half moon slices

Sourdough Baguette cut on the diagonal about 1 to 1 1/2 inch thick

White bean hummus

Arugula

Aged balsamic vinegar

Olive oil

Sea salt

Preparation:

Add some water to a pan and begin to heat.

Add the sliced garlic and onions and begin to sauté.

When the color begins to change add a little oil and sea salt, continue sautéing.

Add the tomato paste and fold together with the onions.

Add the seitan and additional sea salt, then turn the flame on low and simmer for

7 minutes..

Drizzle a little more olive oil and fold to blend well before serving.

While the seitan is simmering add a little olive oil to a frying pan and turn on the heat.

Allow the oil to heat then place the bread in the oil.

Drizzle additional olive oil on the to side of the bread.

Lightly pan fry the bread to a light golden brown color, then flip the bread on the

other side. Take a clove of garlic and gently rub it on the warm bread.

When the bread is cooked on both sides remove it from the pan and place on

a paper towel to drain.

Place the garlic bread on a plate then add a spread of hummus.

Place the seitan on top then add a little arugula.

Finish with a drizzle of olive oil and aged balsamic vinegar.
